The flavors are all so fragrant yet not overwhelmingly spicy. This is just enough kick to get you started. This recipe is directly from Will Yeung’s Youtube channel. The only difference is that I leave out the garlic and Onions.


	Ingredients:
2 Star Anise1/4 Teaspoon Clove1 Teaspoon Sichuan Peppercorn1 Stick Cinnamon4 Cardmon Pods2 Bay Leaves1 Teaspoon Black Pepercorn1/2 cup Korean Pepper Powder1 Tablespoon White Sesame Seeds2 Teaspoon Himalayan Pink SaltSmall piece of Ginger2 cups Avocado OilSplash of Black Rice Vinegar


	Toast the star anise, cloves, peppercorns, cinnamon stick, cardamon, and bay leaves in a frying pan on medium heat for 2-3min.  Then, set aside
Add the pepper powder to a heat proof jar followed by the sesame seeds, salt, and the toasted spices
Roughly chop the ginger
Pour the avocado oil into a small saucepan and add in the ginger
Heat the oil on medium.  When it starts to bubble, turn the heat down to medium low and simmer for 15min
Carefully strain out the oil with a sieve
Add a splash of the vinegar into the jar followed by the hot oil
Give it a stir and let it infuse for half a day.  Keep in the fridge for a few months.

Nameko Mushrooms is the best thing I’ve ever tasted in Miso soup. Discovered this mushroom at a local farmers market on Clement Street. This mushroom is so interesting as it adds nuttiness to the broth. I will never not add Nameko Mushrooms to my miso soup.&#38;nbsp;



	Ingredients:
4 Cups Dashi4.5oz Nameko Mushrooms7oz Silken Tofu4 Tablespoon Miso Paste


	Add Dashi and simmer on medium heatRinse &#38;amp; chop mushrooms into bite sized piecesOnce the Dashi is boiling, start to add in the mushrooms, tofu, and lastly the Miso pasteI like to disperse the miso paste through a metal sieve

	Ingredients:
4oz Mushrooms (of your choice)7oz Spaghetti2 Tablespoon Oil2 Teaspoon Miso3 Tablespoon Butter (room temp)1/2 Cup Heavy Cream
	Bring a large pot of salted water to boilChop/ pull apart mushrooms into bite sized chunksHeat over skillet or pan until brownedWhisk Miso Paste &#38;amp; Butter into a small bowl to a smooth pasteAdd sautee mushrooms &#38;amp; add in miso-mushroom paste togetherAdd in Heavy Cream &#38;amp; drained noodles &#38;amp; mix together until combinedServe with cracked pepper

Cooked Rice1 Tablespoon Sesame Oil4 Tablespoons Sweet Miso SauceBit of Oil for greasingSesame Seeds for garnish1 sheet of Nori, cut in 6 pieces
Sweet Miso Sauce
300g Miso
6 Tablespoons Mirin
1/3 cup sugar
3 Tablespoons Water
1 1/2 Teaspoons Vinegar



	Cook the rice to instructionsScoop rice onto a plate to coolWet your hands to prevent sticking and start to compress the rice into the desired shape, or triangleOnce the rice is all assembled, you can mix together the sesame oil and sweet miso sauceLay onigiri onto lightly oiled baking sheet and brush the sauce onto one sidePlace under hot grill or a broiler until the sauce begins to charFlip onigiri over and repeat the sauce on the other sideOnce done, you can take them out and wrap each yaki-onigiti in nori before eatingDress with sesame seeds

	Ingredients:&#38;nbsp;
Kimchi
2 Napa cabbages (4lbs)
Daikon Radish- matchstick
Carrot- matchstick

Sauce
1 Apple
1 Korean pear
1 knob ginger
* Blender or food processor. 

Then add in,
1 1/2 cup crushed red pepper. Set aside

Rice mixture
2cup water
2 tablespoons glutinous rice flour 
2 tablespoons sugar

Mix water and flour together first 
Add in sugar after mixture is thick
Set aside and let it cool completely then add to the pear and apple. 

^Mix all together with carrot and daikon. 

When kimchi feels rubbery, drain water and rinse kimchi. Squeeze all water out.

I normally dislike Banana flavored things, but this banana bread is the first of its flavored kind for me to enjoy. I usually will have one to two bananas that become soggy beyond repair, so I’ve turned them into these magical bread creations. I’ve enjoyed eating them for breakfast and as a quick midday snack. Super moist and not overwhelmingly sweet.

	Ingredients:
1 Banana1 Egg1 Teaspoon Vanilla Extract3 Tablespoons Olive Oil1/2 Cup +1 Tablespoon Flour1/4 Cup Granulated Sugar1/4 Cup Brown Sugar1/4 Teaspoon Baking Soda1/4 Teaspoon Salt
	Preheat Oven at 325 degrees F.Mix all the ingredients into one bowlPour into parchment paper containerOnce ready, Bake for 14-25 MinsBake until tops become golden brown



Replacements
*I usually will just do 2/4 Cup brown sugar instead of granulated sugar
*For every additional banana, I will add another 5 minutes to the baking time

	Sweet Tart Crust 
Ingredients:

1 1/4 cup Flour
1/2 cup Powdered sugar/ Granulated Sugar
1/4 Teaspoon Salt1/2 Cold Butter cut into cubes
1 Large Egg
1/2 Teaspoon Vanilla Extract
Notes:

*When kneading the dough, I combined it a little more so it wasn’t so crumbly.
	Mix together Flour, Sugar, &#38;amp; Salt until combined

Add butter cubes &#38;amp; mix until crumbly

Add egg and vanilla extract and keep mixing until the dough is no longer dry and starts to clump together, about 10-15 seconds.

Roll dough into ball and cover. Refrigerate for 1 Hour or freeze to prevent shrinking as it bakes.

Once ready to bake, roll out and put into baking pan

Make sure to use pie weights or use parchment paper &#38;amp; fill with rice to help keep the structure as the crust bakes.

Bake at 375 for 20-30 minutes. Does not need to bake until golden or the crust will be too tough to bite into.

	Lemon Curd FillingIngredients:
2 Large Eggs + 2 egg yolks (or 3 Large eggs)3/4 cup Granulated Sugar1 Tablespoon Lemon Zest1/2 cup Lemon Juice (2-3 Lemons)2 Tabespoons Heavy Cream1/2 cup Unsalted ButterNotes:

*I ended up using 3 Eggs
	In a heatproof bowl combine eggs, sugar, lemon juice, and heavy cream together.

Place bowl over a saucepan of boiling water on moderate heat. – Keep stirring for 10-20mins until mixture is thick (Coats the back of your spoon &#38;amp; leaves a clear pass if you run your finger through.)

Maintain heat at 170 degrees F.

Once pulled off the heat, strain mixture through seive to remove chunks.

Add in the butter chunks and fold mixture together until smooth, set aside to cool
*Mixture will continue to thicken as it cools

Whipped Cream
Ingredients:

1 Cup Heavy Cream (Chilled)
2 Tablespoons Sugar (Powdered Sugar)
1/2 Teaspoon Vanilla ExtractNotes
*Opted to use powdered sugar*For some reason, this combo allowed to the sturdiest of peaks. Did not melt at all even if I left it piped on the tart for one day.
	Place bowl in the freezer for 15 minutes.

Add everything into bowl and use electric beater. Increase the speed until stiff peaks form.

Refrigerate unused Portion for  up to 24 hours.


Overall (Notes to Self)

Getting a Cleaner Crust Edge
The first versions of the crust, I did not freeze so the crusts molded to the parchment paper. The results came out with deformed crusts. Before I stack parchment paper and weights, I need to freeze it to keep its shape.
Playing with the Icing Shapes

If I want cool Icing shapes I should just get an Icing pipe. A ziplock bag works great otherwise.

	Ingredients:&#38;nbsp;
1/2 cup (1stick) Unsalted Butter&#38;nbsp;(Another 2 Tablespoon of butter for the Pan)2 Large Eggs, at room temp1/2 cup Granulated Sugar2 teaspoons Lemon Zest1 teaspoon Pure Vanilla Extract1 cup sifted All Purpose Flour1/2 teaspoon Baking Powder1/8 teaspoon Salt


	Melt the butter and set aside to slightly cool as you prepare the rest of the batter.Using a handheld or stand mixer fitted with a whisk attachment (didn’t notice a difference using either one), beat the eggs and sugar together on high speed for at least 8 minutes.Beat in the lemon zest and vanilla extract until combined. (The remaining ingredients are mixed together by hand; &#38;nbsp;you no longer need the mixer.)Whisk the flour, baking powder, and salt together in a small bowl. Using a spatula, gently fold into egg mixture. I suggest carefully folding in half of the flour mixture, then folding in the other half. Stir 1/4 cup of the batter into the melted butter. It will take a minute to fully incorporate. Then stir it all into the rest of the batter. The batter will be thick, silky, and shiny.Cover the batter and chill in the refrigerator for 30-60 minutes. Try not to chill any longer than this as the butter in the batter will begin to solidify.--(Theres more, I just got tired of copying. To be continued, refer to the website linked)
